My NEXT Project...a new cookbook for ONE in the making!

Fettuccine Alfredo with Spicy Garlic Bread

--for one!

I'm in the process of working in my own "test kitchen," creating recipes for my new book--coming soon--"Table for One--A Book of Single-Serving Recipes!"

If you know me very well, you'll know I struggle with the math (fractions) on reducing ingredients from recipes that feed small armies. So, I'm writing my own cookbook--a long-time dream of mine!

In the meantime, here's a teaser:

Fettuccine Alfredo for One

In a 4-ounce ramekin (yes, that's your mixing bowl!), mix the following ingredients for the alfredo sauce ahead of time:

1 Tablespoon melted real butter (I make my own)

1/2 cup heavy cream

1/8 teaspoon of dried spinach

1/8 teaspoon dried garlic

1/8 teaspoon dried onion flakes

1/8 teaspoon chopped fresh parsley (or dried)

3 Tablespoons grated Romano cheese

Using Fettucccine Nests (I used Colavita pasta di qualita), place TWO nests into boiling, salted water with a Tablespoon of Extra Virgin Olive Oil. Stir pasta carefully until it comes to a boil again and cook 5 minutes. Drain immediately. Salt to taste with (kosher or sea salt) and add a touch of cracked black pepper.

Pour Alfredo sauce into the pasta, stirring constantly. Plate and top with (1 Tablespoon) grated Parmesean Cheese.

Do NOT forget the...

Spicy Garlic Sourdough Bread!

Oh my goodness...I made this recipe on a whim, using a slice of Sourdough bread I had on hand:

Turn oven on Broil while Fettuccine is cooking.

Place a slice of Sourdough bread on a cake pan (right size--no need for a huge cookie sheet)

Place three small pats (or 2 Tablespoons) real butter on the bread

Sprinkle bread with:

Kosher or Sea Salt (approximately 1/8 teaspoon)

Crushed Red Peppers (1/8 teaspoon)

Dried Garlic flakes (1/8 teaspoon)

Place under the broiler. Once butter starts to melt, take the back of a wooden spoon and spread butter and spices all over the bread. Brown and serve!

This is a really QUICK meal! I love that on a work night!! Approximately 500-600 calories (see below). And I served it with Ginger Tea and Honey.

Approximate Nutritional Information:

Fettuccine Alfredo - 329 calories (111 calories from fat), 15.3 grams protein, 11.9 grams fat, 44.4 grams carbs

Sourdough Bread - 100 calories (5 calories from fat), 3 gram protein, .05 grams fat, 21 grams carbs

Butter - 36 calories per pat (36 calories from fat), 4.1 grams fat = 3 pats 106 calories

Spices

Hot Ginger Tea - 63 caloories (0 from fat), .08 grams protein, 17.71 grams carbs
