Lasagna Roll-Ups
My favorite meal is lasagna. I've eaten many baked varieties, cut into squares and served up with garlic bread and a great Italian salad, but I've never made Lasagna Roll-Ups until today!
One roll-up is a perfect serving size, but you might want two for a really hearty meal. And you can make several for your family...the convenience of this make-ahead meal is limitless!
Here's what you will need:
1 Tablespoon Olive Oil
1/2 lb. Ground Beef (I use 97% lean)
1/4 c. finely chopped white Onion
1 teaspoon Sea Salt
1 Tablespoon Worchestershire Sauce
1 clove Garlic, minced
1-14 oz. can petite diced Tomatoes with juice
1 teaspoon Oregano
1/2 teaspoon Basil
1 cup fresh Mozzarella cheese, thinly sliced
1 cup Romano cheese, finely shredded
1 cup Parmesan cheese, finely shredded
8-10 Lasagna Noodles, cooked with Sea Salt, dash of Olive Oil
1 cup Tomato Sauce, for topping
1/2 cup more Parmesan cheese for topping
First, in olive oil, add lean ground beef, salt, Worchestershire sauce...then add onions, and spices...crushing meat so there are no large chunks.
Then add diced tomatoes and the juice.
Using fresh mozzarella, Romano, and Parmesan Cheeses, shread, cut thinly or grate.
Cook lasagna noodles and lay out on a baking sheet covered with parchment paper.
Top with meat sauce, then cheese.
Roll up carefully and place in a baking dish.
Top with tomato sauce and shredded Parmesan cheese. Bake at 375 degrees for 20-25 minutes.
Let each Lasagna Roll-Up cool completely. Wrap each one in foil, then place in a large freezer bag. To enjoy, remove a single-serving from freezer--or more--defrost, bake...ENJOY!
